“Cooking is like breathing to me” – Chef Sanjeev Kapoor
Milton (23 June, 2018) : This was the response given by Master Chef Sanjeev Kapoor when asked by a journalist about how many number of signature dishes he plans to unveil every month. ” Cooking is like breathing to me and you all agree with me that we don’t keep counting the number of breaths which we take every day. Similarly, I don’t keep a target of creating “X” number of signature dishes every month and then try to achieve it. It just happens naturally. ” He added.
Master Chef Sanjeev Kapoor was speaking with journalists on the occasion of formal inauguration of his signature fine dining restaurant, ‘Khazana’, in Milton, ON.
He also added that restaurant business is not an easy business as it may seem from outside and globally 85% of the new restaurants close down their operations in their first year itself. This includes all standalone restaurants and is not restricted to Indian restaurants alone.
When asked about the reason behind the choice of location in Milton, Masterchef mentioned that there is tremendous amount of market analysis which includes analyzing the local market eating habits, cuisine preference, disposable income available to population, demography and accessibility. Town of Milton was also warm in welcoming the global signature cuisine chain.
Milton Mayor Gordon Krantz was also present on the occasion and he mentioned that Milton was one of the fastest growing town in Ontario with highly qualified population and was open in welcoming new businesses for the town’s growth. Gordon Krantz is the longest-serving mayor of major municipality in Canada. Milton councillor Robert Duvall was also present on the occasion.
Speaking on the occasion Khazana franchise owners Rashmi and Shailesh Gangwani shared their experiences working with Masterchef Sanjeev Kapoor and family and how supportive he was in ensuring that the setting up of the Khazana, the first in North America. Masterchef remarked their patience and attention to detail and perfection has significantly contributed to the success of Khazana in Milton.
Audience saw a live cooking demonstration by Masterchef, using one of our Canadian Iconic ingredients, Maple Syrup and fish. Masterchef also shared his funny moments. ” Cooking is all about various permutations and combinations. You have to keep changing the ingredients and quantities to achieve perfection. Most of the time it is simple mixing and then praying that everything would work out well and dish tastes awesome “.
The event also witnessed the philanthropic aspect of Rashmi & Shailesh Gangwani family, when they gifted $10000 to the Milton District Hospital Foundation, which was well appreciated.
